Vegan Feta
This vegan feta recipe has the classic tangy, salty, savory flavors and firm-crumbly texture of classic feta but without any of the dairy. It's surprisingly easy to make with a block of extra-firm tofu and a few pantry staples. Crumble into salads and wraps, serve on top of crostini, or toss into pasta.

Drain the tofu and slice vertically into 4 slabs. Line a cutting board with a few layers of paper towels or a clean dish towel. Place the tofu slabs on top, wrap the tofu in more paper towels or a clean dish towel, then weigh the tofu down with a heavy cookbook, or a large plate weighed down by a few cans of beans (or use a tofu press). Press the tofu for at least 30 minutes (I usually leave it for an hour), changing the towels in between.

This is delicious and so easy to make. I make this almost every week to add to my salads. One of my many favorites from Nisha !

I make this recipe on a regular basis. It works for everything from a quick snack to salad toppings, and I really enjoy it.
I do have one question. When I first started making it, the texture was a bit chewy, which I really liked. Lately, however, it has been much softer, almost mushy, and I can’t figure out why. The last few times I even used super-firm tofu, yet I ended up with the same result.
Do you have any ideas what might be causing it to turn out so soft? I’ve been sticking closely to the recipe, so I’m not sure what has changed. Thank you

I make this several times a year at the request of my youngest son. He fell in love with this tangy, cheesy tofu when he tasted the first bite at 6 years old. He’s requested it ever since, on his birthday, for special occasions, and just randomly. I can’t think of a higher recommendation than that of a 6 year old.
I gave up dairy a year ago and found this recipe as a vegan replacement to feta cheese on my salad. This is so much better than feta. I make a batch almost every week and my whole family loves it !!!!
