I made this recipe using stewed apricots and gluten free flour. It turned out very well and is delicious.
Next time I'll use more stewed fruit as it seemed to disappear with cooking. Or, maybe I'll follow the recipe and use fresh when available...
GF flour seems to have made it very crumbly the next day. Still tastes good though.
This was really delicious made from fresh tangy NZ apricots. I did find the proportions of pastry a little out of wack and found it too thick for and 9 inch pan. Next time I will use less pastry, roll it out thinner.
This is my go-to comfort food recipe in early summer, when is fresh apricot season here. Thank you :*
