I made this cake as a way to utilise buttermilk that I didn't want to go to waste, and holy cow!! I used a simple sheet pan, rather than a cake tin, and made sure to keep an eye on the timing (because I know that if I adapt a recipe, I need to be responsible for what happens), and WOW! I took this in for my co-workers and have never, ever been given as many compliments (or sent as many thank you messages) for other bakes I have taken in. This recipe is easy, and incredibly delicious!
I followed the recipe exactly and it needed more than 60min at 320. I have an oven thermometer, temp is accurate and used a light coloured baking tin. It took 70 minutes but the cake is DELICIOUS!
I’d try 50-60min at 350 next time.
