My Grandma's Oatmeal Cake is an old-fashioned cake made with rolled oats and a delicious coconut almond topping.

Instructions

  1. Preheat oven to 350 degrees F. Grease a 9x13'' pan with non-stick cooking spray.

  2. Add the oatmeal and butter to a bowl and pour boiling water on top. Set aside.

  3. In a mixing bowl combine the eggs, brown sugar, and white sugar and mix well.

  4. In a separate bowl sift together the flour, cinnamon, baking soda, nutmeg, and salt.

  5. Add to the bowl with eggs and sugars and stir to combine. 

  6. Add the oatmeal mixture and stir to combine. 

  7. Bake for about 35 minutes or until a toothpick inserted in the center of the cake comes out clean.

I was wondering if I could add preserved (canned) peaches, rum raisins and pecans to this recipe? Some measurements and any additional information/advice would be really appreciated. I had this cake for the first time in a restaurant and loved it so much that I Googled old fashioned oatmeal cake so that I could make it at home. This was the perfect recipe and the entire cake was demolished. Will definitely make again!

Does it have to be made in a glass baking dish? Or would a 9x13 metal baking pan be okay? I'm worried about the glass under the broiler

This cake definitely took longer than 10 minutes to assemble and 40 minutes to bake. With that said, it smells devine. We haven’t tried it yet!!

My old recipe was a depression era cake so it replaced butter with oil and did not have nutmeg. I liked this one better. Much richer tasting cake. I did use this topping which has butter but prefer my old topping which did not have butter but cream instead. So now I have a new recipe with the best of both. Thank you!

I just made this as a half recipe to test it out for a group lunch on Tuesday. I chose this one because I have tons of old fashioned oatmeal, as well as walnuts. The only ingredient I changed was to use unsweetened coconut, because I didn't have the sweetened kind. But it worked just as well. Moist, tasty but not too sweet. I'm going to try it with pecans and the sweetened coconut and maybe raisins. It's super yummy and healthful too!! It's a keeper!!

I tasted this at someone’s house during Christmas and it was amazing!
Mine was meh.🫤
The cake was dry and I also didn’t have enough topping to spread all over the cake. I also realized I didn’t have evaporated milk, so I just used the milk I had.
I may try it again.

Did we have the same grandma? I love this recipe and have it in my grandmother's original handwriting! I was looking for embellishments to hers but i guess there is none! (She boiled her icing prior to application rather than broiled it after). I do like the crispiness and beautiful browning from the broiling
