Gluten Free Vegan Oatmeal Chocolate Chip Cookies (V, GF, Dairy-Free): an easy recipe for soft, chewy oatmeal cookies bursting with chocolate chips and oats! Vegan, Gluten-Free, Dairy-Free, Whole Grain.

Preheat oven to 350°F. Line a baking sheet with parchment paper or greased foil. Set aside for later.
In a medium bowl, whisk together all the dry ingredients: oats, oat flour, baking powder, baking soda and salt.
In a large bowl, whisk together all the wet ingredients: coconut oil, coconut sugar, maple syrup, flax eggs and vanilla. Whisk until thoroughly combined and resembles caramel.
Add the dry ingredients to the wet ingredients. Whisk until thoroughly combined. Fold in Add-In ingredients: chocolate chips and oats.

Storage Store in an airtight container at room temperature for up to 1 week.
Freezing instructions: store in an airtight container in the freezer for up to 1 month. Allow to thaw at room temperature for about 30 minutes before enjoying. Or, heat in the microwave in 20-second increments until warm.

I just made these cookies and they are really good. I made a double batch, half chocolate chip walnut and half raisin, both brown ,golden and mulberries I got at Home Goods. I used half the coconut oil the recipe called for and subbed it with applesauce This is a nice healthy treat!
An easy and excellent recipe that all my loved ones with their myriad allergies can enjoy! I used half chocolate chips and half raisins, and I added 2 tablespoons of flax powder and the cookies were still nice and chewy! :)
This is my new favorite cookie! I used olive oil, since I had no coconut oil, omitted the coconut sugar, as just maple syrup is sweet enough for me, and added toasted walnuts. Really yummy. Thank you!

Thank you for having shared this recipe! The cookies came out perfect almost like storebought minus the additives. I have to venture on making my own cookies due to digestive issues and I can say this recipe is a gem.
Love these cookies, they turn out great! I went to make a double batch and didn't feel like shaping so many cookies, so I just made into bars on a baking sheet, and baked for a bit longer. 😄
