Instructions
Heat the cream in a pan until a bubble or two appears around the outside of the pan.
Meanwhile, chop the chocolate into very small pieces. You can use a food processor for this if you like.
Put the chocolate into a bowl and pour over the hot cream.
Leave to stand for 2 or 3 minutes and then stir until totally combined and smooth.
Put the mixture in the fridge for about 3 hours until very solid.

NotesDouble cream: It’s best to use double cream for this, or if you’re outside of the UK, heavy cream or rich cream
Dark chocolate: I use my favourite Callebaut chocolate for this recipe. This chocolate is just amazing. It melts so well and really makes a difference to any recipe. Good quality chocolate makes all the difference here
Desiccated coconut: This is what gives them a ‘snowball’ effect and adds something to the flavour, but it’s fine to leave it out if you aren’t a fan
Storing: Store these in the fridge until ready to serve, or until you give them to someone. They should last up to 1-2 weeks (if they last that long!)
Gifting: I like to gift these truffles at Christmas packaged in these cellophane gift bags. With a bit of ribbon, they look lovely
