Honey joys are a classic old-fashioned childhood treat.  All you need is 4 ingredients - cornflakes, honey, sugar and butter - and you'll have a batch of these delicious honey crackles in 20 minutes.  The only honey joy recipe you'll ever need!

  2. Melt butter, sugar and honey in a small saucepan over medium heat, stirring regularly, until the mixture is smooth and frothy.

Tips for making Honey JoysDon't have caster sugar?  Use granulated sugar instead.Use fresh cornflakes.  You don't have to open the packet that day but don't use the pack that's been left unfinished in the back of the cupboards for months on end.  Honey joys are best when they're crispy!Feel free to make them the day before being served - they will still be crunchy and fresh. Makes 12 large clusters or 24 smaller clusters. Store them in an airtight container once they've cooled completely.  Keep them at room temperature if you'll eat them in a day or two.  Pop them in the fridge to extend them to a week.Makes 12 large honey joys or 24 smaller honey joys.  This will all depend on what size paper liners you use and how much you fill them up.
