Lemon and lime no bake cheesecake

I have already made several of Erin‘s recipes and was never disappointed. This one was no different. Made it yesterday for a family gathering and everybody loved it. I was feeling fancy and drizzled some biscoff cream on top and added some crumpled biscuits as well. 10/10 would recommend.

I’ve made this twice in as many weeks and it’s been a huge hit. I wanted a cheesecake that’s not too sweet and this one is perfect. I didn’t have powdered gelatine so I used three gelatine leaves, and because I like them and Sophie also suggested it, I used ginger nuts.

I was inside the house serving, and sending slices of this out to a group of 12 people and I heard the whole party fall silent as everyone fell into cheesecake awe - this compliment is directed entirely at Erin. I just did the mixing. So thanks for the excellent recipe and I expect that people are going to be requesting it from me for the next decade.

Wow what an easy cheesecake to whip up! I made this in my bathroom during kitchen renos 🤣 that was the only difficult thing about this recipe.
Flavor turned out soo good. It's moreish but not too sweet. I would like to try it however with a base made from gingernuts!

Yes. All things lemon and graham cracker are. Yes. This was exceptional

This was SO good. I had someone in the group whose favorite dessert is key lime pie - he was blown away by how good this was. It has an amazing texture that's light but filling at the same time. Huge crowd pleasure and super easy to make!!
