Grilled Chicken Burger
A super easy and quick Grilled Chicken Burger that's absolutely irresistible. Soft burger buns filled with juicy grilled chicken breast, lettuce, tomato, carrot, beetroot and a sweet chilli mayonnaise. Perfect for a quick weeknight dinner or sharing with friends at a BBQ.

Place chicken breast on cutting board and remove the tenderloin (you'll still use the tenderloin for the burger), then hold the chicken breast flat with the palm of your hand. Using a sharp knife, slice the chicken breast horizontally into two even pieces. Next, place the chicken breast pieces and tenderloin between two sheets of plastic wrap, and use a meat mallet or the bottom of a mug to gently pound the chicken to uniform sizes.
Place chicken breast pieces and tenderloin in a bowl, cover with paprika, garlic powder and olive oil and mix together.

You can cook the chicken on the grill / BBQ if the weather is good!Use store bought mayonnaise or make up a batch of this immersion blender mayonnaise.I love the combination of mayonnaise and sweet chilli sauce, but you can easily just use mayonnaise if that's all you have on hand! You can easily double or triple (or more) this recipe to feed a crowd. Why not just place all the toppings on a platter and let everyone build their own?
