  2. In a large bowl using a hand mixer, or in the bowl of your stand mixer fitted with the paddle attachment beat together the brown sugar, butter, molasses, egg, and vanilla until well combined.

A very successful and easy recipe. The cookies are just the right sweetness, outside crunch and soft chewy inside. I might add 1/4 teaspoon of extra ginger. I made eighteen 3.5 in diameter cookies. I will make this again.

These had good flavor but mine came out flat as a pancake. I kept double checking that I had all the ingredients in there. I did so I am not sure why they were so flat.

Just got these into the oven and they are baking as we speak! I refrigerated the dough for a while before portioning and rolling into the sugar so I hope they don't spread too much. I'm sure it'll be a delicious cookie either way. Hello from a fellow Nichole-with-a-H!
