Chocolate Choux au Craquelin with Chocolate Hazelnut Whipped Cream Filling
Rounds of Choux dough are topped with chocolate craquelin and baked to perfection, then filled with silky chocolate hazelnut whipped cream

Instructions
Place all ingredients in a stand mixer fitted with the paddle attachment. Beat on medium until combined. Turn out the dough onto a large piece of parchment paper, and top with a second piece. Roll out to 1-2mm in thickness. Place the dough, still between the parchment sheets, in the freezer for an hour, or until ready to use (Can be made ahead).

all came together great. folding in nutella without breaking the whipped cream was challenging. will have to try another batch once we devour the current one.
Made these a while ago and they were WONDERFUL. I have just come back a few months later for the recipe, now I will try to make Choux au Craquelin (Cream Puffs) with Caramelised White Chocolate Whipping Ganache. Might leave off the bananas and pecans since idk who will not like them / be allergic!

These were the best cream puffs I have ever made! I never had them with craquelin and it was a game changer. It added a little extra crunch that I didn’t know I was missing. The whipped Nutella filling was also delicious it was the perfect ratio. The cream was not too sweet and still had good Nutella flavor. Will definitely make again :)
This really is delicious and so easy to make. Was able to make the craquelin and the whipped cream ahead of time and assemble later on. Everyone loved them and they last several days in the fridge and are even better cold!
