  1. If the Medjool dates are not very soft, cover them with hot water for 5 minutes, then drain and pat dry. If using Deglet dates, soak for 15-20 minutes.

  2. Place the oats in the bowl of the food processor and pulverize them until you have a fine oat flour.

  3. Add the pitted dates, peanut butter, maple syrup, vanilla, and salt to the oat flour. Pulse until the mixture forms into a sticky dough. If it feels too dry, add a spoon of plant-based milk (or more maple syrup), a teaspoon at a time until the dough just sticks together when pressed.1. NOTE: If the dough is too sticky to handle with your hands (this is more likely if your kitchen is warm), place the dough in the fridge for 20 minutes to firm it up a bit.

Chef's Notes

* After pitting the dates and packing them into a 1 cup measuring cup, you should have about 7 ounces or 200g of dates.
** You can also use store-bought oat flour – about 2 1/4 cups worth.

The recipe sounds good, and the batter was great! It's just a shame that it was too much for my Black & Decker food processor handle and broke it.

After I flourered out the oats, I pressed everything into the food processor, it Blended for 2 seconds and then was not able to blend anymore and was broken. My high-speed blender was not able to blend either, and the dates did not incorporate into the batter (deglet), and we're even added in fine dices to help with texture when blending :/

I ended up spending $10 to make this recipe and have to pay 50 or 60 to recover from it

I'm glad it worked for the other viewers though! It is a bummer that neither of my two high power blenders were able to handle it though

These are delicious, nutritious, and easy to make: triple threat! I work full time and have a four year old son. He's moderately picky. I make these once every two weeks or so and he eats them often for breakfast or an afternoon snack. PS we started making these when our oven was broken and now they are a staple.

So easy and so delicious. I’m home on bed rest with Long Covid and ME/CFS. I need to watch sugars and was craving something sweet. Simplicity is key. This was manageable even with having to make both the peanut butter + jelly from scratch, as I was out of both. Scrumptious, thank you.
