A simpler, less messy way to poach eggs is to cut squares of Saran wrap. Butter the center of the squares lightly. Drop one or two egg in the center of each square, Twirl the four edges together. Left each pouch and submerged in almost boiling water. Timing is based on egg size. We use only Jumbos and they take about 4-5 minutes. Pull them all put together (o let some remain in longer for those who want more ell-done egg).

Another advantage--the cooked eggs have flat bottoms and tend to sit on the ham better.
