Biscotten torte, often known as biscuit cake, is a delicious dessert that is prepared up to 24 hours in advance. Easy and delicious, layers of biscuits sandwich a delectable almond cream, which is smeared with a rum-milk combination. The perfect fridge cake.

Instructions

  1. Cream butter and sugar until light and fluffy.

  2. Beat egg yolks into the creamed mixture, then add the ground almonds and almond essence.

  3. Gradually beat in a ½ cup of milk.

  4. In a clean bowl beat egg whites until stiff peaks form. Fold half into the creamed mixture, then fold in the remaining egg whites.

  5. Combine rum and the remaining ½ cup of milk.

  6. Arrange six biscuits lengthwise in two rows, beside each other, on aluminium foil. Brush the biscuits liberally with the rum/milk mixture.
