Preheat the oven to 350 degrees. Lightly grease a 9X13-inch baking pan and set aside.
In a medium bowl, whisk together the flour, baking soda, salt and oats.
In a large bowl, or in the bowl of a stand mixer fitted with the paddle attachment, cream together the butter, peanut butter, brown sugar, and sugar until fluffy looking and light in color, 2-3 minutes.
Add in the vanilla, egg and egg yolk. Mix together well.
Add the dry ingredients into the wet and mix just until combined.

I always reserve about 1/4 cup of the peanut butter chips and the chocolate chips to sprinkle on top of the bars before baking.

Since moving to Utah, these cook for even less time now. If you are high altitude you may want to set the timer for 13-14 and watch it from there. Look for the edges to be light golden brown and pull away from the sides of the pan. The center should still look pale and slightly underdone. Let them cool and they will set up nicely.Â

absolutely! I have made this recipe many times and each time they're perfect! it's become my go-to recipe especially if I'm taking a meal to someone, or taking to a party.

I loved these! I used quick oats, dark brown sugar (what I had on hand), and cooked for 17 minutes, as my pan was a little smaller so the bars were thicker. About 2/3 of the top didn’t look done (still shiny), but I took them out anyway because the sides were starting to brown. As everyone else has said, don’t over bake! Definitely wait 30-45 minutes before cutting them, they need to harden a little. I loved the tip in the comments about using parchment paper or wax paper to put over the dough to spread it out easier. Thank you!

I made these today, I didn't have anything but natural peanut butter, and I read what you said about them turning out dry, so I added about a tablespoon or so of oil to the recipe, and also added some chopped pecans. It came out perfect, and SO tasty. Thank you, I will be making these all the time! :)
