Instructions

  1. Place the potatoes into a large pot and cover them with water.

  2. Place the pot over high heat and bring the water to a boil.

  3. Boil the potatoes until fork tender, about 15 minutes.

  4. Drain the potatoes into a colander. Return them to the pot and let them cool a bit while you prepare the dressing.

  5. Whisk the oil, vinegar, shallot, Dijon mustard, sugar, and 1/2 teaspoon of salt together in a small bowl or liquid measuring cup.

  6. Place the potatoes into a large mixing bowl. Add the parsley, chives, and dill.

This is my new go-to potato salad! I love that it's very allergy friendly, doesn't have any creamy elements that I worry would go off if left out for a picnic or bbq, and it's so fresh. The herbs make it really special. I used less oil & salt, because my partner has to watch his calories & sodium, and it was still sooo yummy. I'm gonna be making this all summer.
