Chef's Notes

Pork chops are sufficiently cooked when the internal temperature reaches 145 degrees.

Chicken or beef broth can be used instead of wine.

Thinner cuts of pork can also be cooked right in the skillet and added when the chicken broth is added.

I found this recipe and had to make it. Excellent end product. Very tasty; our pork chops were boneless and about 1/2 inch thick, so I simmered them in the sauce to finish. Glad we have leftovers. Thank you very much.

My husband does not like to try anything new. He likes his pork chops fried well-done then sliced into a tortilla! When I do force-feed him a new recipe, he'll eat it, but I have to pry from him whether or not he likes it. The usual response is, "It's OK". My next question is, "would you like to have it again?" The best response I've gotten is, "I'd eat it." Well! From the time the mushrooms started to caramelize, he walked into the kitchen and said, "Smells good already." While he was eating, I asked him the usual, "What do you think?" His answer was, "Don't bother me - I'm eating". After a chuckle or two he finally said, "This is good! " and, without me asking the next question, volunteered, "I'd like to have this again." That is the first time in 19 years he has volunteered that answer. I followed the recipe to a "T" and it was absolutely delicious! The only comment he made was, "too bad there wasn't more gravy", so I'll have to try to expand it without destroying the flavor profile completely!!! He even suggested it would taste good served over mashed potatoes, and he hates potatoes!! This is definitely a keeper!!
