Lemon cucumbers have no lemon flavor and their skin is slightly thicker and the center is more seedy as the fruit stays on the vine longer. Eat them when they’re more younger with a lighter yellow color so that they’re more crisp and tender.For the pesto, adjust the amount of parmesan cheese according to your preference. The more parmesan you use, the rich the pesto will be, however it will also become lighter in color. Adjust the amount of oil depending on your personal preference for how thick you like your pesto.

These are a nice soft, cake-like molasses cookies which has a nice texture from the grated sweet potato.  If you really want to knock someone's socks off, macerate the raisins for a long time, like a couple weeks or more. If you don't have any buttermilk on hand, make your own.  In general, add 1 tablespoon of lemon juice to 1 cup of milk and let sit for for 5 minutes. So for this recipe, add 1/4 Tablespoon (just a bit less than 1 teaspoon - 3 teaspoons=1 tablespoon) of lemon juice to a 1/4 cup of milk, then let it sit for 5 minutes.  Perfect buttermilk substitute.

There are lots of recipes quickly microwaving spaghetti squash to cook it, but I just like the taste and texture of roasting the squash better. It brings out the aromas and fills the kitchen. If pressed for time to make dinner, since the squash is warmed in the pan with the sausage at the end, one could always roast the spaghetti squash ahead of time and then quickly heat it with the sausage at dinner time. Try not to over cook the squash until it becomes overly soft. It should still have a bit of a bite to the texture.

You'll be less likely to puncture or stretch the dough unevenly.If you aren't going to serve all of the pasta, you can freeze the uncooked noodles in a zip-lock bag for up to a month in the freezer. Take the dough straight from the freezer to the boiling pasta water when ready to use.
