Russian Salad With Creamy Mustard Vinaigrette

Russian Salad With Creamy Mustard Vinaigrette

This yummy Russian Salad with Creamy Mustard Vinaigrette is a lighter, healthier version of a very classic mayonnaise based dish. The deliciously creamy vinaigrette from our cookbook brings a tasty less calorific twist to this easy summer side. We've cooked the classic combo of veggies for the salad from scratch, as putting them warm into the dressing makes them absorb it more and very tasty, but you can make this with leftover waxy potatoes and cooked vegetables you have on hand, and although the recipe calls for roasted, you can use vacuum packed beets for speed. Just be sure to drain them well. Enjoy!

Spiced New England Style Corn Chowder

Spiced New England Style Corn Chowder

This spiced New England style corn chowder is a light and delicious vegetarian soup whose delicate smokey taste owes nothing to bacon. It’s the spicy chipotle pepper that’s used whole in the broth that gives this easy soup its flavor. This is a good thing. Smoked meat can be carcinogenic, so it’s a great idea to find natural substitutes to get that smoky flavor into your cooking without it. You will note we’ve used whole milk. Many chowders use richer evaporated milk or cream, so we thought this was a good compromise!

Basic Steamed Millet

Basic Steamed Millet

Millet is an ancient grain that was a staple through much of Europe before the use of rice spread in the 15th century. It is still a staple in much of the world particularly in Africa and India, where it has the reputation to be a warming food. Wholegrain millet is extremely nutritious, rich in minerals like selenium, phosphorous and magnesium and also in B complex vitamins. It makes a great substitute for couscous, bulgur or even quinoa. Steamed millet needs toasting before cooking to bring out its full flavor, so don’t skip this step. It’s best not to crowd the grains when you do this, so as here, use a bigger wider pan than the quantity might seem to need.

Basic Pressure Cooker Risotto

Basic Pressure Cooker Risotto

A pressure cooker makes easy work of risotto. This basic Pressure Cooker Risotto recipe is the template that will allow you to make untold variations of this classic northern Italian dish. There’s little to no stirring involved and if you follow the quantities and cook times it will come out perfect every time. The butter and cheese beaten in at the end will make your risotto creamy as they melt into the remaining broth. If you are cutting down on fat, forget the butter and beat in the cheese on its own.

Turnip "Grits"

Turnip "Grits"

Turnips have a great sweet peppery flavor! With their rich grits-like porridge, these turnip grits are the perfect comforting small plate when treatment has left you weary and not up for much. Taste aside, the benefits of turnips are many; they are low carb, which won't sap your remaining energy, and with cousins kale and cabbage, which are part of the cancer-fighting cruciferous family, they are some of the best allies a person can have on the cancer journey. Go turnips!
