  1. Preheat oven to 375°F.

  2. Cube sausage links into small slices. Chop the red pepper into small pieces. In a bowl, whisk the eggs, lightly salt and pepper, mix again.

  3. In a frying pan pour 1 tsp oil, add the sausage and pepper, sauté until done or golden.

  4. Pour eggs into the pan with the sausage and pepper. Cook until eggs are fully cooked. Set aside to slightly cool.

  5. Add the 1 cup cheese, mix.
