Stuffed Zucchini Boats Recipe

Ingredients

• Salt and Pepper to taste
• 1 tablespoon Fresh Thyme chopped
• 1/2 cup Tomato Puree
• 1/2 pound Bacon
• 4 medium size Zucchini
• 2 tablespoons Tuscan Olive Oil
• 1 pound Italian Sausage casing removed
• 1 ½ cup Yellow Onion diced
• ½ pound Mushrooms sliced
• 1 Red Bell Pepper, small dice
• 1 tablespoon Fresh Rosemary Leaves chopped
• 2 tablespoons Fresh Garlic chopped
• 2 large cans (28 ounces each can) peeled Tomatoes, drained and chopped
• 1 cup Mornay Sauce or 1 ½ cup mixed grated Cheddar and Swiss cheese and Reggiano Parmesan
