Season each layer to flavor to every bite Add spice blends like Italian seasoning, cajun or taco seasoning to switch up the taste
Use 80/20 uncooked beef as the juices from the beef seep into the potatoes adding flavor.
For a milder onion flavor, fry the onions with a bit of butter first (or use caramelized onions).
Add cheese in the layers (or on top for the last 30 minutes) if desired.
Be sure to cover the dish and no peeking. The steam helps cook the rice and potatoes.
If stored in the fridge, hamburger potato casserole will keep for about 4 days.

This is my favorite meal! I am a picky eater and only eat a handful of things, so I make this often. I always bring a couple servings to my elderly father because this is also his favorite meal, my husband also loves it. The only thing I do is cook my onions 3/4 through before adding them to the casserole because they seem to take forever to get tender and I do not like crunchy onions.
Mine was super easy! I had leftover veggie-full beef and pork meatloaf, and leftover Mexican rice. I baked some potatoes in the microwave and then roasted them. It all came together quickly. I did add some more tomatoes, bell peppers, jalapenos, and broccoli. Easy and filling comfort food that will be going into lunch boxes the rest of the week. This even works well wrapped in a tortilla or on top of a crispy tostada served with some salsa fresca. Ooh, scramble some eggs, and make a breakfast burrito! The kids will love those! Thanks so much!!!
I made the tomato, potato and hamburger casserole. Amazing!
It was delicious.
I used venison with Italian seasoning and a venison seasoning. Light sprinkle.
I used a light sprinkle of basil on top.
And put shredded cheddar cheese for the last 5 minutes.
I also used thinly sliced red potatoes with some skin.
Added the rice and beef broth with the other liquid.
Turned out perfect!
This was a major hit in my household. I sliced the potatoes pretty thick (0.25”) to keep them from getting soggy and they came out perfect. This will be a dinner staple moving forward!
My grandma used to make this all the time, she was on a fixed income and fed 6 kids and numerous grandkids. It was called shipwreck though.
This is so delicious so easy just one dish to clean feeds a crowd and is budget friendly. I did a layer of carrots and cabbage. I will make this over and over. Thx
