Instructions

  1. Place the chicken in the bottom of a 6-8 quart electric pressure cooker.

  2. Salt and pepper to taste.

  3. Add artichokes, butter, garlic, lemon, lemon zest and broth to the pot.

  4. Cook under high pressure for 8-10 minutes.

  5. Naturally release for 15 minutes before switching to quick release.

We adapted our Crock Pot Creamy Artichoke Chicken to make this electric pressure cooker version. That recipe was adapted from a recipe found in Keto Gatherings, a low carb cookbook that I absolutely adore.
We have tested this recipe in a Ninja Foodi and Instant Pot, but you can use any 6-8 quart pressure cooker. If you use a larger pressure cooker, you may need to add liquid if your unit struggles to reach pressure.
We like using our Air Fryer Bacon (or our Ninja Foodi Bacon) in recipes like this that call for precooked bacon.
We like to use this tool to zest lemons. You will be amazed how much flavor lemon zest can add to your dishes AND it is way easier to do than you think.
