  1. Preheat oven to 180° C fan-forced (200° C conventional). Place a 9-hole silicone madeleine pan on an oven tray.

  2. Beat eggs, sugar, lemon rind and vanilla in the small bowl of an electric mixer for 5 minutes, or until thick and creamy.

  3. Sift flour and baking powder twice, then fold into egg mixture with butter. Put half the batter into the holes of the madeleine pan.
