Thai-style pork omelettes
Make this for breakfast, lunch or as a light dinner.

Whisk eggs in a medium bowl with half the pepper and half the fish sauce. Heat a wok over high heat. Add 2 teaspoons of the oil and 1 tablespoon of the green onion; swirl to coat.
Add a quarter of the egg mixture, swirling to form a 20cm round. Cook for 1 minute; transfer to a plate. Repeat with another 2 teaspoons oil, green onion and egg three times to make four omelettes in total.
