Spray the inside of the Instant Pot with cooking spray.
Pour in the rolled oats, almonds, brown sugar, cinnamon, and salt. Mix.
In a small bowl, whisk together the olive oil, honey, and vanilla.
Pour the wet ingredients over the dry ingredients and mix until fully combined.
Cover partially with a glass lid, leaving about 3 inches of open air.
Press the Slow Cook button and adjust the time to 2.5 hours.
Let cook, stirring every 30 minutes.

Delicious recipe. I wasn’t sure the granola was going to crisp up, so after I laid it out on a cookie sheet, I put it in the oven on 375 degrees for about 10 min then broiled it on low for about 3 min. This worked well and my granola is crispy.
Super easy to make, tastes so good on Greek yogurt. I did half craisins half raisins. It’s a little salty, chewy and sweet-sooooo good!!
