Chef's Notes

PARSLEY: I use fresh parsley leaves, with smaller stems on. Usually 2 bunches of parsley are enough.  
SPEARMINT: Spearmint can be replaced with mint, dill or tarragon. For best taste use fresh herbs. 
VEGETABLE OIL: Sunflower oil or canola oil can be used. I never deep fry the burgers, but simply oil at the bottom of the pan and refill as needed during cooking. 
BAKING: Burgers can be baked in the oven (180C/360F), do not use hot air  – brush them with some oil before baking, so they do not come out dry. 
VARIATIONS: Depending on the brand of flour and ricotta used, you may need to use one egg, instead of two – that is if mixture becomes watery and difficult to retain shape before frying.
