Spray the pot of your slow cooker/Instant Pot with nonstick spray. Spread onion and garlic in a layer on the bottom of slow cooker or Instant Pot.
Place pork on top of garlic and onions, then season with salt and pepper to taste. Pour 1/2 of the BBQ sauce on top of pork (about 1 cup).
