I love eggplant in garlic sauce from my favorite Chinese restaurant. I’ve been wanting to master this dish because it’s a great alternative to serve on those meatless days. Its unctuousness and velvety come from the eggplant and its chock full of flavor from the garlic, chili, and ginger. I made a few substitutions to compensate for the Shacha sauce that I forgot to buy at the Asian grocer. What I added to the sauce instead of the Shacha sauce was 1 tablespoon of Hoisin sauce, 1/4 tsp. of shrimp paste, 1 tsp. of fish sauce and 1/8 tsp. of salt. I also like a bit of heat so I added a good pinch of crushed Szechuan peppercorns.
