Oven roasted cauliflower paired with juicy baby tomatoes and fresh basil makes for a beautiful healthy salad! Gluten free and dairy free.

  1. Preheat oven to 180 C.

  2. Make sure your cauliflower is chopped up into small florets (nicer to eat and they cook more quickly too). Spread out over a baking tray lined with baking paper and drizzle over half the olive oil and a good sprinkling of salt and pepper. Place in the oven and roast for about 20 minutes or until just turning crispy and brown at the edges. Remove and set aside.

Chef's Notes

Notes*I love this salad with a few poached or fried eggs on top (with the yolk a little runny so it mixes in to the salad). It’s also nice with some tinned tuna if you want to tote it along to work!
*Swap the fresh lemon juice for a teaspoon or two of balsamic vinegar for a different flavour.
