This gluten free bread is moist, full of flavor and goes perfect with soup.  You can slice it for a sandwich and even toast it.

Instructions

  1. To a mixing bowl, add warm water, yeast and honey.  Allow to sit for 10-15 minutes until frothy.  

  2. In the meanwhile, whisk together sorghum flour, white rice flour, cornmeal, baking powder and sea salt.

  3. Once yeast mixture is frothy, add avocado oil, chia seeds and psyllium husks powder.  Mix well in a mixer and allow to sit for 1 minute.

  4. Add dry mixture to wet mixture.  Form a ball and cover with a towel.  Allow to rise for 1 hour.  

  5. Place a dish filled halfway with water on the bottom rack of the oven.  Place a pizza stone on the center rack and heat oven to 400 degrees Fahrenheit.

  6. Place bread dough on a parchment paper and sprinkle dough with quick oats.

Hi Esther, I need some help with this bread. Lately it's been coming out rather gummy inside. I'm following the recipe, we love it, but I'd like it to be drier. Should I add more flour? More yeast? Longer rise? Need your advice please.

I've made this bread twice in 4 days. It's so good, comes out so well. Everyone who's tried it agrees. Including nondairy gf friends and my gluten eating dairy loving husband. I need to browse your recipes for more like this.

I made the bread using this recipe and it was quite dense but tasted wonderful and would recommend this for pizza crust
