  1. Preheat your oven to 400 degrees F.

  2. Wash and pat dry all the veggies.

  3. Dice the potatoes, zucchini and squash into cubes (about 1-2 inches), do the same with the peppers (remove and discard seeds), peel the onion and cut into wedges.

  4. Place all the veggies into a large bowl, add olive oil, garlic and pepper and mix until everything is coated.
