  1. Preheat your smoker to 275ºF with a cast iron grill topper or mesh grill pan for 15 minutes. You want the surface to be hot to prevent sticking.

  2. Mix the breadcrumbs and ranch seasoning together before adding the eggs, 2 tablespoons (30g) of buffalo sauce, gorgonzola, and ground chicken. Use your hands to mix everything together.
