Combine cider, mustard, balsamic vinegar, 1 teaspoon salt, and 1 teaspoon pepper in a large plastic zippered bag and mix together.
Place the roast in the bag, close the bag, and marinate in refrigerator for at least 12 hours or overnight.
Preheat your oven to 450°F and place a rack in a shallow roasting pan.
Remove the roast from the marinade and pat dry with paper towels. Discard marinade.
