We follow this recipe for quick pickling our green beans. We do let them sit a couple of days before they hit their absolute perfection.
(Adding a tsp of red pepper flakes is a major hit)
This is over-the-top delicious. I made a double batch, threw in some broccoli as well, and used purple cauliflower to infuse everything with color. They're a big hit and not lasting long around here, so time to make more. Like so many things, I'll never buy store-bought again. Thanks so much!
I made this recipe with one exception. I left out jalapeños. I was so easy to make. It turned out great, not too sweet, not too vinegary. The veggies are still crunchy without being hard. Hubble and I both love it.

Hi Kate, have you thought of doing a kimchi recipe? I can't find one that I like: authentic but doable. A lot of them are very complex for a reason, however, we are in an apartment in the city and storing or even burying multiple jars are an issue. Would love your POV on traditional kimchi!

This is actually a classic medley for this Mexican side dish! But I think people who only pickle one thing at a time are crazy, or not crazy enough ;) the more veggies you layer in, the cooler it looks, too!
Just some ideas for fellow veggie adventurers: okra, radish, bell peppers, asparagus, green beans, daikon, cabbage, ginger, chiles, eggplant...
I recommend making an afternoon out of it and maybe getting someone to do some slave labor -- err, help with chopping! Then you can make a bunch of jars at a time with different veg combos. I'd do some of these without the jalapenos and vary spices, maybe add mustard seed, dill, and/or coriander to some -- but that's me.
You can pay the help with a jar of delicious pickled veggies ;)

Super easy.
I do 2 heads of cauliflower per batch and quadruple the recipe.
I've made this several times now with white wine vinegar, red wine vinegar and apple cider vinegar.
All are very tasty but the white wine vinegar batch has a cleaner, snappier and crisper flavor.
I add other misc peppers to and a 1/4 tsp of red pepper flakes per quart jar of mix.
WOW!!! I am obsessed with those Trader Joe's Spicy Pickled Veggies and this recipe NAILED IT!!! The only thing I changed for the liquid was using Coconut Sugar instead of the Maple syrup or honey. I am so so happy to have found this recipe. We don't have a TJ's near us so I know I'll be making this a lot. I used Tri Colored Carrots, Cauliflower, Jalapenos, Yellow Onions and Jicama. Thank you so much for sharing this!
Just did this. Super simple recipe for the liquid and yet really yummy! I used cauliflower, red onions, tri-colored carrot coins, and shredded carrots. They're cooling now and look so pretty. Thanks for the recipe!
Kate, I must thank you for this recipe! I've been looking for a quick pickling liquid and I couldn't find one that worked for me - they were either too sweet or too salty or too involved - and I was too lazy to work on tweaking one to my liking. I tried yours yesterday to pickle some okra (my friend had an abundance from his garden) and it is simply perfection! I subbed fresh dill for the bay leaf and oregano and that worked great. I'm SO excited to try this on other veggies now. THANK YOU!
This is a great recipe for a new to pickling girl like myself! Looking forward to trying this out and seeing if I fare as well as you did!
