Refreshing and crunchy salad. Great accompaniment to a heavy main or simply on it's own (bulk up by adding some rotisserie chicken). Also really good to have at a BBQ!

Instructions
Combine salad dressing ingredients in a small bowl and mix well. Set aside.
In a large salad bowl, add red cabbage, fresh parsley and apple sticks.

Note 1. Stop apples from turning brown after apples have been cut into matchsticks, soak lightly salted water for about 2 minutes. This will stop the apples from turning brown! No need to rince afterwards. Just go light with the salt. A good pinch of salt to 3 cups of water will do the trick for 1 - 2 apples.
