This vegetable-packed homemade marinara sauce is packed with tender veggies. It's perfect with pasta dishes or as a dip on it's own!

  1. Wash, peel ( if needed), and dice all the vegetables( except the mushrooms & diced tomatoes). Toss all of the veggies into a food processor.

  2. Pour 2-3 tbsp of vegetable oil into a large pot. Turn the heat on medium.

  3. Add all of the minced vegetables into the pot

  4. Add in the tomato sauce, diced tomatoes, seasonings, and garlic.

  5. Pour in 3 cups of water, and mix until everything is well combined.

  6. Toss in the mushrooms, and fold in.

Very good! I had to omit the sugar, dietary reasons so I added a red pepper in hopes it would sweeten it a bit, it did but the sugar is key. Loved it!
