Spicy Garlic Shrimp Noodles

Ingredients

• Black pepper, to taste
• 2 tbsp oyster sauce
• 2 tbsp soy sauce
• 2 tbsp mirin
• 1 tbsp toasted sesame oil
• 1 tbsp sugar
• 2 green onions
• Generous pinch of toasted sesame seeds, to garnish
• 3 tbsp neutral-tasting oil
• 3 tbsp Korean chili pepper flakes (gochugaru)
• Small pinch of MSG (optional)
• 2 baby bok choy
• Soft-Boiled Eggs (optional), to serve
• 10 raw shrimp
• 10-15 garlic cloves
• 1/2 tsp (2g) fresh ginger
• 2 packs udon noodles (or spaghetti, fettuccine, rice noodles, etc.)
• 1 tsp neutral-tasting oil (or toasted sesame oil), to coat
• 1 tsp Korean chili paste (gochujang)
