Peel the sided of the dragonfruit away from the inner flesh of the fruit.
Cut the fruit into about a dozen pieces and place in a blender.

To make the lemongrass infused simple syrup:1. Heat 1 cup of water and 1 cup of sugar in a saucepan until the sugar is dissolved and starts to thicken slightly.2. Cut the root end of the lemongrass off and the top of the stalk. You should have about a 4-5 inch piece of the white lemongrass.
3. Place this on a cutting board and beat with a kitchen mallet to break up the stalk.
4. Place the smashed stalks into a container and pour over the simple syrup while warm.
5. You can let the syrup sit overnight and then remove the stalks and strain it.
The simple syrup will store nicely in the refrigerator for several months.
