Slice the zucchini in half lengthwise. Using a spoon or melon baller, scoop out the flesh from the center, leaving a ¼-inch shell around the edges. Save the zucchini flesh in a bowl for later. Arrange the zucchini halves in a large baking dish and spray them with olive oil. Bake in the oven for 15 minutes until slightly softened. Remove from oven.

Absolutely amazing!! Took a little time and issues with spooning out the zucchini. But, regardless it taste so good!!!
I made this with mushrooms. Onions, red bell pepper, garlic and pepperoni! I added the sauce per directions plus I put some more on the bottom, added shredded mozzarella, chopped pepperoni, the mixer and topped with more mozzarella. ABSOLUTELY DELICIOUS!!!
