  1. Place 8 oz. feta cheese, ½ cup whole milk yogurt, and juice of 1 medium lemon in the bowl of a food processor. Blend until very smooth and creamy, 30 to 40 seconds. Season with kosher salt and black pepper, and either use immediately or store in the fridge for up to 5 days.

  2. Preheat a grill or grill pan to medium-high heat.

  3. Toss 8 lamb chops (about 1" thick) with ¼ cup extra-virgin olive oil and season with kosher salt and black pepper. Cover and set aside at room temperature.
