Marry Me Salmon Meatballs

Ingredients

• 1/2 Tsp Salt
• 1 Tsp Thyme
• 1/2 Cup Chicken stock
• 1/2 Tsp Ground black pepper
• 1 - 2 Tbsp Olive oil
• 1 14.5 Oz Coconut milk
• 1/2 - 1 Tsp Red pepper flakes
• 1/2 Cup Shredded parmesan
• 2 Tsp Garlic powder (divided)
• 2 Lbs Ground salmon (mine was from Sitka Salmon Shares)
• 2 Tsp Oregano (divided)
• 2 Tsp Onion powder (divided)
• 1 Tsp Ground basil
• 1/3 Cup Sun-dried tomatoes and liquid
• 5 Whole Garlic cloves (minced)
• 1 Bag Fresh spinach
• 2 Ounces Fresh basil (torn)
