If you love your pork medium rare, you should cook it to an internal temperature of 145 degrees (followed by a three-minute rest). If you like your chops a little more done, you can cook them to an internal temperature of 160 degrees.

These were the best pork chops we have ever made. Bone in chops are key I think. This will definitely be added to the regular rotation. The only thing I changed was decreasing salt from 1 tablespoon to 1 teaspoon. It was plenty salty for us!
I made both the pork chops and the spinach salad and both were excellent! Both the rub and salad were easy to put together and the salad was delicious and a perfect pairing with the pork. The family loved the meal and there were no leftovers! I will definitely make this meal again.

This is a simple but great rub. The cumin makes it.
