Instructions

  1. Place quinoa and water in a medium pot. Bring to a boil then reduce heat to low and simmer, covered, for 15 minutes. Fluff with a fork and set aside.

  2. Meanwhile, stir together sauce ingredients and set aside.

Well, I am about 2 years late to the party, but I love reading your WIAW and this was on last weeks and so I made it and it's DELISH. As always, thanks for for the great vegetarian recipes! BTW.......Shouldn't "rice" be in quote marks, as well?

This is really yummy and it was put on the make again list. My kids (6 and 3) also liked this (i omitted the onion and bok choy for their sake). There are some leftovers that I am dying to eat and it's only 8am. :)
