Heat avocado oil in a pan over medium heat.
Add the curry powder, turmeric twist seasoning, garlic powder and ginger root, and toast, stirring, until fragrant well combined, 1 to 2 minutes.
Add the chicken, onion, salt and pepper and toss until evenly coated in the spices. Cook, stirring occasionally, until chicken is cooked through, about 5 minutes.
Add the sweet potato, broccoli, and tomato paste and toss into the mixture until evenly combined.
Add the coconut milk and stir until well combined.

I love this curry recipe! It is easy and delicious. Great for leftovers too. I've made this curry quite a few times now and it is my go-to curry! These are some substitutes I have made that work very well.
Avocado oil- Butter
Turmeric twist powder- Turmeric powder
Garlic powder - Fresh garlic
Ginger root powder- Fresh ginger
Coconut milk- Oat milk
Arrowroot flour- Cornstarch
Broccoli- Zucchini & Spinach
Chicken thighs- Chicken breasts
I've also made this with no onion and it is still delicious.

This is really delicious and indeed, easy! I added some Madras curry powder to give it a little kick. It was good left over too. Thanks for another great recipe.
