Instructions

  1. Preheat oven to 450°.

  2. Place potatoes in a large pot of water and bring to a boil; boil until potatoes are cooked.

  3. While potatoes are cooking, make the pesto.

  4. Combine all pesto ingredients in a blender or food processor and pulse until combined; set aside.

  5. Once potatoes are cooked, drain them and then place them on two separate baking sheets.

  6. Use a fork or potato masher to carefully smash the potatoes.
