I've been feeling a bit burnt out but not so much that I want to spend a lot of money on lunch instead of cooking, so I made a single serving of this for lunch today. It really hit the spot! I used gluten free crackers instead of the pretzels and added a hard boiled egg because I need a bit more protein. This is super simple - exactly what I needed right now!
I like nut butters, and I'm planning on trying this again, but with walnut, almond, or cashew butter on the next round.
Love this combo, especially helpful to have that when busy tending to a baby! Thank you so much for sharing this delightful no heat meal preps!

With my kid's school on remote learning, I'm suddenly in need of frequent snacks for his breaktimes - this is PERFECT! I picked up a slightly smaller container, deglet instead of medjool dates available, but this is an absolute winning combo for my first-grader.
