Ingredients: 40g unsalted butter; zest of 1 lemon; 1 cinnamon stick; 75g plain flour; zest of 1 orange; 2 egg yolks; 10 cardamom pods; 300ml water; 10g fast-action dried yeast; 5 whole star anise; small pinch of salt; 2 tsp rosewater; For the Baba; 25g milk powder; 15g unrefined golden caster sugar; 55ml warm milk; For the Spiced Tea Syrup; 200g unrefined light muscovado sugar; 2 tbsp masala chai tea; 70ml spiced Mauritian rum
