Miso Aubergine & Broccoli Traybake
We love traybakes — they’re so simple and amazingly versatile. The dressing in this recipe adds flavour and transforms an easy meal into something really delicious. Lime juice, tahini, tamari and a dash of almond milk is drizzled over roasted aubergine, broccoli, black beans and finished with a sprinkling of sesame seeds and spring onions.

Preheat oven to 190°C fan / 375°F. Place the aubergine and drained black beans on a baking tray and add the maple syrup, sesame oil, brown rice miso paste and a pinch of salt. Mix well and cook for 20 minutes.
After 20 minutes, remove from the oven and mix through the broccoli. Then return to the oven for a further 10–15 minutes until the aubergines soften.
