  1. Soak beans in water overnight or use quick soak by placing beans in a large pot, cover with water plus about 2 inches and bring to a boil. Boil 5 minutes, remove from heat, cover and let soak for 1 hour.

  2. Drain and rinse beans.

  3. In a soup pot, heat oil over medium, add the onion and garlic and cook, stirring constantly, for 2 minutes. Do not drain off the oil.

  4. Add beans to pot with rosemary and bay leaf.
